Burst Cherry  Tomato Pasta

I’m OBSESSED with this burst cherry tomato pasta! It is so summery, easy to come together and just so delicious.

Ingredients you need

Pasta of choice (we're using spaghetti), burst cherry tomatoes, fresh basil, sugar, salt, pepper, red pepper flakes, garlic cloves, virgin olive oil, parmesan cheese, lemon juice

Step 1

Cook pasta in a pot of boiling salted water until al dente.

Step 2

In the meantime, heat a skillet or pot with olive oil. Add tomatoes and stir for 1-2 minutes. Then add garlic, red pepper flakes, salt and pepper with a pinch of sugar.

Step 3

Cook well until the tomatoes burst and release their juices to create your sauce. About 10 minutes while stirring occasionally.

Step 4

Next, add in a dash of pasta water from your cooking pasta. Add in chopped basil and stir for 1-2 minutes until cooked down and the sauce becomes creamy and saucey.

Step 5

Toss in your pasta and finish off with pasta water and parmesan until your pasta is cooked throughout the way you prefer. Add in a knob of butter when you're adding in the parmesan cheese for an extra glossy finish!
