Chicken with Green Goddess Dressing & Spanish Rice
One pan crispy chicken with spanish rice and a green goddess white bean dressing! this is such a comforting dish and I love how quickly it comes together. It’s a salt, pepper, paprika marinade on the chicken crisped in a cast iron and then removed, make the rice in the same pan with the chicken juices and add chicken back in. drizzle on your dressing and save some for more meals for the week!

Ingredients
Green Goddess White Bean Dressing
- 3 sprig chives
- 2 handful basil
- 1 ⁄2 cup parsley
- 2 handful cilantro
- 1 ⁄2 cup dill
- 1 ⁄2 cup olive oil
- 2 cloves garlic
- 3 ⁄4 teaspoon salt
- pepper to taste
- 1 tablespoon white bean hummus
For the Chicken
- 1 pound chicken of your choice we used legs
- salt and pepper to taste
- 1 tablespoon paprika
- For the Spanish Rice
- 1 cup jasmine rice
- 1/3 rd cup tomato sauce
- 1/2 tablespoon cumin
- lemon juice to serve
- basil and watercress to garnish
Instructions
- Begin by making your white rice according to your package instructions. Make your dressing in a blender or food processor by mixing chives, basil, parsley, cilantro, dill, olive oil, garlic, salt and pepper and white bean hummus. Set aside.
- Next, heat a skillet with a drizzle of oil. Char and crisp your chicken on all sides until fully cooked through. Remove. In the same skillet, add your rice, tomato sauce, cumin and lemon juice. Mix. Add back in your chicken and top with your dressing + herbs.
