Plant Based Mac N’ Cheese
I love this plant based Mac N’ Cheese! It is creamy, and dreamy, filled with a base of blended soaked cashews and nutritional yeast, spices, it is addicting. Tossed all together with my favorite cavatappi pasta and topped with homemade toasted panko breadcrumbs.
You can mix and match with your spices here, but we’ve kept it simple here with mustard powder, onion powder, garlic powder and paprika.
What You Need for Your Mac N’ Cheese
Cashews, mustard powder, nutritional yeast, spices of your choosing, oat milk or almond milk, pasta water, olive oil and toasty breadcrumbs. (I always have some panko toasted breadcrumbs on hand).
How to Make Your Mac N’ Cheese
Soak your cashews overnight (or boil them day of). This helps soften the nuts, and helps with the blending process.
Begin by making your cheese sauce. Heat a pot with a drizzle of olive oil and bloom your spices: onion, garlic, paprika, salt, pepper and nutritional yeast for about 2-3 minutes on low heat.
Next, add your oat milk and stir until everything is smooth and dissolved.
Transfer your cheese sauce to a blender with the soaked cashews until a creamy cheese sauce is formed. Toss over your favorite pasta, with a dash of pasta water, salt to taste and top with breadcrumbs!

Ingredients
- 1 cup cashews (soaked overnight)
- 1 pound cavatappi (or pasta of your choice)
- 1/2 teaspoon mustard powder
- 1 cup nutritional yeast
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1 cup oat milk (I'm using Califia Farms here)
- 1/4th cup pasta water
- 1 tablespoon olive oil
- salt and pepper to taste
- top with toasty panko breadcrumbs (optional)
