This Thai-Inspired tomato salad is absolutely so refreshing! With the end of summer creeping in, I am fueling up on SO manyย  tomatoes, like having them absolutely everyday.

I also LOVE the mixture with thai basil and shallots. Then pour over a homemade soy-fish sauce dressing and you have yourselves a SUPER quick and easy salad.

Thai-Inspired Tomato Salad

This Thai-Inspired tomato salad is absolutely so refreshing! With the end of summer creeping in, I am fueling up on SO manyย  tomatoes, like having them absolutely everyday.

Ingredients 

  • 3 pounds tomatoes of your choice
  • 2 thinly sliced shallots
  • 1 tablespoon soy sauce
  • juice of 1 lime
  • 1 bundle thai basil
  • 1 tablespoon fish sauce
  • pepper to taste

Instructions 

  • Prep your ingredients by slicing your shallots and tomatoes and place in a bowl with thai basil.
  • In a mixing bowl, add your soy sauce, lime juice, fish sauce and pepper and pour over your tomatoes.
