Watermelon Poke with Matcha Dressing

Watermelon poke bowls – marinated and baked watermelon to give an “ahi” tuna- like texture, mixed together with avocado, rice, green onions and a matcha dressing. I love making this when it’s hot outside and I want a simple, vegetarian bowl for lunch or dinner.

Ingredients

  • 3 cups watermelon cubed
  • 1/4th cup soy sauce/coconut aminos
  • 1 tablespoon rice wine vinegar
  • 1/2 tablespoon ginger grated
  • 1 tablespoon maple syrup
  • 1 tablespoon olive oil

For the Dressing

  • 1/4th cup Califia Farms GoCoconuts
  • 2 teaspoon matcha powder
  • juice of 1 lime
  • 1 tablespoon olive oil
  • 1 tablespoon rice wine vinegar
  • 2 teaspoons hot water

For the Bowl

  • rice
  • avocado
  • green onions
  • sesame

Instructions

  • Preheat your oven to 350. Cube your watermelon and mix with soy sauce, rice wine vinegar, ginger, maple syrup and olive oil.
  • Roast for 15-20 minutes. Let cool.
  • In the meantime, make your dressing by adding matcha powder and hot water, mix well until all combined.
  • Then add your GoCoconuts, lime juice, olive oil and vinegar.
  • Assemble your bowl by placing in your rice and poke and topping with avocado, green onions and sesame seeds.
