Watermelon Poke with Matcha Dressing
Watermelon poke bowls – marinated and baked watermelon to give an “ahi” tuna- like texture, mixed together with avocado, rice, green onions and a matcha dressing. I love making this when it’s hot outside and I want a simple, vegetarian bowl for lunch or dinner.

Ingredients
- 3 cups watermelon cubed
- 1/4th cup soy sauce/coconut aminos
- 1 tablespoon rice wine vinegar
- 1/2 tablespoon ginger grated
- 1 tablespoon maple syrup
- 1 tablespoon olive oil
For the Dressing
- 1/4th cup Califia Farms GoCoconuts
- 2 teaspoon matcha powder
- juice of 1 lime
- 1 tablespoon olive oil
- 1 tablespoon rice wine vinegar
- 2 teaspoons hot water
For the Bowl
- rice
- avocado
- green onions
- sesame
Instructions
- Preheat your oven to 350. Cube your watermelon and mix with soy sauce, rice wine vinegar, ginger, maple syrup and olive oil.
- Roast for 15-20 minutes. Let cool.
- In the meantime, make your dressing by adding matcha powder and hot water, mix well until all combined.
- Then add your GoCoconuts, lime juice, olive oil and vinegar.
- Assemble your bowl by placing in your rice and poke and topping with avocado, green onions and sesame seeds.
