Take your ordinary grilled cheese sandwich to the next level with ooey-gooey center and buttery, garlicky herby outside, reminiscent of your favorite garlic bread.
Bread slices, cheese, butter, kosher salt and black pepper
Preheat your oven to 400 degrees. Slice your garlic in half, lengthwise, and place on aluminum foil with a drizzle of olive oil, salt and pepper. Roast.
In the meantime, take out butter to room temperature while your garlic is roasting.
Next, add your softened butter in a small bowl and squeeze out your roasted garlic, add salt, pepper, parsley and parmesan. Mix to combine.
In a pan, spread over your butter mixture on one side of the bread and place in the cold pan. Then top with your shredded cheeses, and finish with your second piece of toast over that, spread over the butter mixture towards the top side of the bread.
Turn on the stovetop. Toast and cook until the cheese melts then flip and slice.
