Garlic Bread Grilled Cheese

This garlic bread grilled cheese recipe is everything! Take your ordinary grilled cheese sandwich to the next level with ooey-gooey center and buttery, garlicky herby outside, reminiscent of your favorite garlic bread. I LOVE it and the flavor is insane!

What do you eat grilled cheese with?

What ingredients do you need for garlic bread grilled cheese?
Bread slices: I love using a sourdough slices of bread, but you can use anything that is your favorite like french bread, a pullman loaf or white bread.
Cheese: We are using a sharp cheddar cheese, in both white and yellow. Some other cheese ideas (or included more than one variety!) mozzarella cheese, gouda, provolone, colby, goat cheese, Monterey jack, to name a few.
We are also using a parmesan cheese for the garlic butter mixture on the outside of the sandwich, and you can also alternatively use pecorino romano as well!
Butter: softened for the base of the garlic bread portion of this recipe. Toss with parmesan, parsley, and garlic (we are using roasting garlic, but you can use fresh garlic in a pinch!)
Kosher salt and black pepper
Instructions to make this grilled cheese
Roast garlic and take out butter
Preheat your oven to 400 degrees. Slice your garlic in half, lengthwise, and place on aluminum foil with a drizzle of olive oil, salt and pepper. Close up the foil and roast until jammy, about 40-50 minutes.
In the meantime, take out butter to room temperature while your garlic is roasting.
Make your butter mixture
Next, add your softened butter in a small bowl and squeeze out your roasted garlic (you can also opt to use fresh garlic here or even garlic powder, minced), add salt, pepper, parsley and parmesan. Mix to combine.
Make your grilled cheese and serve
In a pan or large skillet, either cast iron or non-stick skillet, spread over your butter mixture on one side of the bread and place in the cold pan. Then top with your shredded cheeses, and finish with your second piece of toast over that, spread over the butter mixture towards the top side of the bread.
Turn on the stovetop. Toast and cook until the cheese melts on medium heat until the bottom side is ready (about 4-5 minutes), then flip and repeat. Remove from the heat, slice and serve.
Tips, Tricks and Substitutions
Is mayo or butter better for grilled cheese? It’s up to you! For this variation of grilled cheese, we are using butter since the base is garlic bread. If I personally was not doing a garlic bread grilled cheese, I would use mayo, as it gives a nice crunch when you’re toasting. However, it’s totally up to your preference.
What are some other seasonings or ingredients I can add to this grilled cheese? If you don’t want just cheese in the center, you can add anything from the likes of chicken, salami, assorted cheese, vegetables like spinach or artichoke as well as some thought starters!
