Ingredients
4 to 5
medium tomatoes
quartered
1
small shallot
sliced into thin rings

tablespoon
champagne vinegar
2
tablespoons
extra-virgin olive oil
Kosher salt and freshly ground black pepper
Instructions
In a medium to large bowl, add in your tomatoes and shallots.
Add over your vinegar, olive oil, salt, and pepper. Tossing super gently to combine and coat, being careful not to break up the tomatoes.
Taste and adjust with salt and pepper. Serve at room temperature, or transfer to the fridge for later.
Notes
Serve as-is or store in the fridge
to marinate to release more liquid and flavor.
Thick tomato slices:
Slice your tomatoes into thick quarters or slices, so they retain their structure and don't get soggy.
Champagne vinegar substitutions:
Use a vinegar such as red wine vinegar, white wine vinegar, or sherry vinegar.
Prep:
You can prepare this up to 1 day ahead of time.
Storing:
Store in an airtight container in the refrigerator for up to 1 day.
