Instructions
First, soak and prep your cedar plank. Soak your cedar plank(s) in warm water overnight, or least 2-3 hours beforehand. This helps the plank not burn when it's cooking. I will place the planks submerged in water usually on a baking sheet. I will add a cup or pot on top to weigh it down to make sure the planks are submerged.
Second, season your salmon and heat your grill or oven to 400 degrees!
Place your salmon skin-side down on the plank. Heat your grill (I'm using a gas grill!) but you can also cook this in the oven at 400 degrees on the cedar plank.
Season with salt, black pepper, olive oil and dijon mustard. Spread evenly to coat the salmon.
Third, grill salmon. On medium-high heat on the grill, cook your salmon until cooked on the inside. You can use a thermometer to make sure it reaches 130-140 degrees (depending on your doneness preference)! In the oven, keep at 400 degrees until fully cooked.
Lastly, remove from the cedar plank and serve! Transfer your salmon to a platter once it is not as hot to handle off the cedar plank to serve with any of your favorite roasted vegetables, salads or grains!
