Preheat your oven to 350 degrees F and make your berry mixture. In a bowl, add your berries. Mix in sugar and flour, lemon juice and zest. Mix until combined. Set aside.
While set aside, make your streusel crumble topping. In another bowl, add in flour, sugar, brown sugar, a pinch of salt and cold cubed butter. Gently massage all these dry ingredients together, until a crumbly mixture is formed. All of the flour, sugar, brown sugar and salt should be mixed into the cold butter into one cohesive topping.
Assemble to bake your dessert. In a baking dish that is oven safe (we are using a medium sized cast-iron), you can use a baking dish, little cocotte's or anything you have on hand, even 2 separate oven safe dishes would work well, if you want to serve them per serving!
Add your berry mixture in the pan. (You can opt to also rub some butter, or add cooking spray on the sides of the pan prior to adding in the berries, but that's optional). Depending on your vessel, this may help with sticking.
Once the berry cobbler mixture is in the pan or dish, sprinkle with your crumbled topping. Bake until the berries are juicy, they are bubbling, and the top crumble topping is golden brown. About 50 minutes to 1 hour depending on your oven. Towards the end of the cooking time (10-15 minutes), you can opt to either raise the temperature to 400 or use the broiler, if you want a more golden brown crust.
Top with ice cream and serve! Remove from the oven, let cool for 5-10 minutes, top with a scoop of vanilla ice cream. Or serve in individual bowls, and then top with a scoop of ice cream. Serve!
