Instructions
Preheat your oven to 425°F. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, paprika, salt and pepper.
Toss the potatoes in a large baking dish, sheet pan, or cast iron with about half of the marinade. Toss until fully coated.
Pat chicken dry and toss with the remaining marinade, coating well. Nestle the chicken on top of the potatoes.
Transfer to the preheated oven with the skin-side up. Roast and cook for 50 to 1 hour, until the chicken reaches an internal temperature of 165°F. You can also flip the pan halfway for even browning on all sides.
If the potatoes need more time, and the chicken is done, remove the chicken on a separate plate, and transfer the potatoes back in the oven until fork tender.
Garnish with fresh parsley, and serve alongside yogurt and a lemon wedge.
Notes
Pat chicken dry before adding to the marinade so the skin crisps
Cut potatoes uniformly so they finish cooking at the same time
