Pat your chicken dry with paper towels. In a large bowl, add your chicken wings and season to toss your chicken with flour, baking powder, garlic powder, paprika, salt, pepper and a drizzle of olive oil.
Place your wings in the air fryer basket at 400 degrees for about 20-25 minutes (depending on your air fryer, go longer if needed!) flipping halfway through until you get an extra crispy skin.
*I like mine a little more on the crispy side, so I'll check in on them, give them a toss, and let them crisp up to my liking. *Alternatively, you can fry these in oil of your choice if you don't have an air fryer, as well as on a wire rack on a rimmed baking sheet in the oven.
While your chicken is in the fryer, make your garlic parmesan sauce. In a small saucepan, melt butter on low heat (you don't want browned butter). Add in your garlic, salt, pepper and red pepper flakes. Toss to combine and let the flavors and aroma come out.
Toss in your sliced scallions and chopped parsley and mix well. Turn off the heat and finish with shredded parmesan, and a dash of vinegar (that's optional, though). Mix to combine.
Transfer your crispy wings to a bowl, pour over your garlic parmesan sauce, and toss to combine until fully coated. Shred more parmesan over the wings, serve with your choice of dipping sauce.
