I LOVE this matzo pizza with parmesan and lemon zest! A little twist on a usual classic for Passover.

Ingredients
2
pieces of matzo
1/2
cup
tomato or marinara sauce
1/2
cup
mozzarella cheese
(shredded)
salt, pepper, red pepper flakes to taste
zest and juice of 1 lemon
top with grated parmesan
garnish with basil, parsley or cilantro
Instructions
Preheat your oven to 400 degrees. Spread your tomato sauce onto your matzo.
Top with shredded mozzarella, salt, pepper, and red pepper flakes.
Bake until cheese has melted, about 10 to 15 minutes
Remove, and top with grated parmesan, lemon juice, lemon zest, and chopped herbs. Slice and serve!
