I LOVE this matzo pizza with parmesan and lemon zest! A little twist on a usual classic for Passover. I don’t know about you, but I could eat matzo pizza year round, and I do. (guilty!)

This meal is just so extremely nostalgic to me. Growing up, I would always look forward to Passover to make matzo pizza. I love it specifically because it’s less hassle than pizza bagels and making a homemade pizza dough so win-win.

There is something so special and reminiscent of matzo pizza for me, and I’m excited to finally put this on my site! My mom would also put butter and sugar on her matzo – so that’s a good option as well. Sweet and salty, it’s a great combo! (PS this is perfect for kids, especially over Pesach).

Not only that, this is legit the most easy recipe and quickest recipe I may ever put on my blog. So enjoy and make some matzo pizza!

What is Matzah pizza?

It is essentially a thin crust pizza using matzah, a cracker-like texture that is eaten over the Jewish holiday, Passover. I personally love it year round!

What is Matzos made from?

Matzah is an unleavened flatbread. It is made from only flour and water, which has not been allowed to rise. We eat matzah during the 8 days of Passover. During Passover, you can’t have any other bread or other leavened bread or grains.

What else can you put on Matzah? 

You can make Matzo Brei (which is matzah mixed with eggs!), chocolate bark for a sweet options or my mom’s personal favorite: spreading butter on the matzah with a little bit of sugar. All are amazing options, and you can honestly top with whatever you have on hand!

Matzo Pizza with Parmesan & Lemon Zest

Ingredients Are Simple, You Need:

  • matzo slices, matzo cracker
  • tomato sauce/marinara sauce
  • shredded mozzarella cheese but you can also use any cheese or dairy you like. Goat cheese, burrata, ricotta, will all work great here!
  • juice of 1 lemon
  • zest of 1 lemon
  • top with grated parmesan
  • garnish with fresh basil, parsley or cilantro and olive oil
  • salt, pepper and red pepper flakes to taste

You can add any of your favorite toppings like mushrooms, red onion, or bell peppers!

How to Make your Pizza

  • Preheat your oven to 400 degrees. Spread your tomato or marinara sauce onto your matzo on a baking sheet, parchment or foil.
  • Sprinkle with shredded mozzarella, salt, pepper and red pepper flakes.
  • Bake until cheese has melted, about 10-15 minutes
  • Remove, and top with grated parmesan, lemon juice, lemon zest, and chopped herbs. Slice and serve!

Some additions that would be perfect for your pizza:

  • Thinly sliced garlic for extra flavor, you can also use garlic oil
  • You can add vegetables and toppings like mushrooms, olives, onions, spinach and bell peppers
  • I’ve also fried an egg on top of mine before!
  • Adding spices like oregano and dried thyme are also great options. Use your favorite herbs and flavors!

What I love about matzo pizza is that it is extremely versatile, and I will just use whatever cheese or ingredients I have on hand!

Ingredients 

  • 2 pieces of matzo
  • 1/2 cup tomato or marinara sauce
  • 1/2 cup mozzarella cheese, (shredded)
  • salt, pepper, red pepper flakes to taste
  • zest and juice of 1 lemon
  • top with grated parmesan
  • garnish with basil, parsley or cilantro

Instructions 

  • Preheat your oven to 400 degrees. Spread your tomato sauce onto your matzo.
  • Top with shredded mozzarella, salt, pepper, and red pepper flakes.
  • Bake until cheese has melted, about 10 to 15 minutes
