Poached Chicken Salad with a Creamy Sesame Dressing
I LOVE this crisp and refreshing poached chicken salad with a creamy sesame dressing. It is so easy to make and comes together so beautifully, not to mention all the colors!
There are 3 steps to the recipe:
First, the poached chicken.
Second, the vegetable bounty for the salad.
And third, a homemade creamy sesame dressing, made with chickpea butter.
How’s It’s Done:
You’ll start by poaching your chicken with ginger, garlic, pepper and salt – SO EASY.
Then you’ll assemble and thinly slice all your vegetables like carrots, jicama, Persian cucumbers & green cabbage! Love to top mine with green onions, sesame seeds, cilantro, and watermelon radish to bring ti all together.
Then you’ll make your creamy dreamy dressing.
It consists of a blend of chickpea butter, rice vinegar, soy sauce, honey, water, ginger, sesame oil, cloves, sesame seeds, shallots, chili flakes.
You’ll assemble everything together and BOOM, we are ready to eat!
