I LOVE this crisp and refreshing poached chicken salad with a creamy sesame dressing. It is so easy to make and comes together so beautifully, not to mention all the colors!

There are 3 steps to the recipe:

First, the poached chicken.

Second, the vegetable bounty for the salad.

And third, a homemade creamy sesame dressing, made with chickpea butter.

Howโ€™s Itโ€™s Done:

Youโ€™ll start by poaching your chicken with ginger, garlic, pepper and salt – SO EASY.

Then youโ€™ll assemble and thinly slice all your vegetables like carrots, jicama, Persian cucumbers & green cabbage! Love to top mine with green onions, sesame seeds, cilantro, and watermelon radish to bring ti all together.

Then youโ€™ll make your creamy dreamy dressing.

It consists of a blend of chickpea butter, rice vinegar, soy sauce, honey, water, ginger, sesame oil, cloves, sesame seeds, shallots, chili flakes.

Youโ€™ll assemble everything together and BOOM, we are ready to eat!

Poached Chicken Salad with a Creamy Sesame Dressing

I LOVE this crisp and refreshing poached chicken salad with a creamy sesame dressing. It is so easy to make and comes together so beautifully, not to mention all the colors!

Ingredients 

For the Poached Chicken

  • 1 thumb ginger
  • 2 garlic cloves
  • 1 teaspoon peppercorns
  • Salt to taste
  • 1 lb chicken breasts

For the Salad

  • 2 carrots, julienned
  • 1 cup jicama, in matchsticks
  • 2 Persian cucumbers, thinly sliced
  • ยผ cup green onions, thinly sliced
  • Sesame seeds, cilantro, sliced watermelon radish to garnish

For the Dressing

  • ยผ cup Field Trip Chickpea Butter
  • ยฝ tablespoons rice vinegar
  • 4 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 tablespoon warm water
  • 1 thumb ginger
  • 1 tablespoon sesame oil
  • 1 garlic clove
  • 1 tablespoon sesame seeds
  • 1 shallot
  • ยผ teaspoon chili flakes

Instructions 

  • To begin, make your dressing by placing all your components in a blender. Blend until all combined and a creamy sauce has formed, set aside.
  • Next, place your chicken in a pot and cover with water, add your aromatics and bring to a boil, then simmer until fully cooked. Remove and shred/slice. Set aside.
  • Slice and assemble all your vegetables for the salad. Toss in a bowl with your dressing and poached chicken. Serve!
