Cauliflower Tikka Masala
Hiya cauliflower tikka masala! creamy, cozy 1 pan meals are what’s on repeat for me recently. this cauliflower tikka has all the indian spice essentials; serve with toasted naan and basmati rice! It’s a one pot meal that is filled with flavor and super easy to make. Especially with fall and the colder weather, I am ALL about this.

Cauliflower Tikka Masala
Cauliflower tikka masala! Creamy, cozy 1 pan meals are whatโs on repeat for me recently.
Ingredients
For the Cauliflower Marinade
- 1 cup greek yogurt
- 1 head cauliflower
- juice of 1 lemon
- 2 garlic cloves
- 3/4th teaspoon paprika
- 1/8th teaspoon cumin
- salt and pepper to taste
For the Sauce
- 1 white onion
- finely chopped 3 garlic cloves
- 1/4th teaspoon ginger
- 1/4th teaspoon garam masala
- 3/4th teaspoon paprika
- 1/4th teaspoon coriander
- 1/4th teaspoon turmeric
- 1/4th teaspoon chili powder
- 2 cups tomato sauce
- 2 tablespoons tomato paste
- 1 can full fat coconut milk
- Salt and pepper to taste
- Serve with rice, naan + herbs
Instructions
- Preheat your oven to 400 degrees. To begin, cut your cauliflower into florets and mix with your yogurt, lemon juice, garlic cloves, paprika, cumin and salt and pepper. Set in the fridge for 1hr- overnight. Before making your sauce, line a sheet tray with parchment and roast your cauliflower for 45-1hr until fully cooked through and browned.
- Next, heat a deep pot with a drizzle of olive oil. Add your onions and stir about 1-2 minutes. Next add your garlic cloves and all your spices to let them bloom. Stir for another 3-4 minutes. Next add your tomato sauce, tomato paste, mix then add your coconut milk. Simmer until everything has cooked through and all the flavors have combined.
- Add in your roasted cauliflower, stir and serve with rice, naan and herbs!
