I love these cilantro lime shrimp fajitas! This shrimp fajitas recipe is filled with flavor and comes together really quickly. It’s an amazing weeknight dinner that is absolutely packed with flavor. I love it SO much!
What to Serve with Fajitas
Serve your fajitas with any of your favorite sides, such as guacamole (or just fresh avocado), sour cream, fresh limes, warm tortillas (corn tortillas works too!), Mexican rice, lime juice/lime wedges, crema, salsa, refried beans or black beans. The ideas are just endless!

What ingredients do you need for cilantro lime shrimp fajitas?
Bell peppers: I love red and yellow bell peppers for this, but you can also use any of your favorite veggies in addition to bell peppers, too.
Onion: I like a yellow or white onion for this, but you can also use red onion for this. I love the combination of onion with the crunchy peppers, it is SO good!
Fajita seasoning: Such as chili powder, smoked paprika, and cumin!
Shrimp: We are using peeled and deveined shrimp for this recipe. You can do this on your own by deveining your shrimp, or you can purchase them already cleaned and ready to go.
Cilantro and lime: We are using fresh cilantro, and fresh lime juice here. I love the tanginess from the lime juice, and the freshness from the cilantro.
Flour Tortillas: I love to serve my fajitas with flour tortillas, warmed through, or charred on the grill or stovetop.
Instructions to make this shrimp fajita recipe
Heat your grill to medium-high heat. In a large mixing bowl, toss together your bell peppers, onion, 2 tablespoons extra-virgin olive oil, 1 tablespoon fajita seasoning, kosher salt, black pepper and juice from half a lime.
In a large cast-iron pan, or on a grated grill pan, add in your pepper mixture and transfer to the grill (or stovetop!) and leave your mixing bowl available to toss your shrimp. Sauté your bell peppers and onions for about 7 to 10 minutes, or until the vegetables are slightly softened and charred.
In the same mixing bowl as your bell peppers were in, add in your shrimp. Toss in your remaining 2 tablespoons of olive oil, 1 tablespoon fajita seasoning, kosher salt and black pepper, as well as your chopped cilantro.
Once your peppers are ready, move them to the side and cook your shrimp. Cook 2 to 3 minutes per side, until the shrimp turn pink and opaque. Toss together your peppers and shrimp, squeezing your other half lime juice.
Remove your fajitas from the grill and transfer to a serving platter or fajita pan. Serve with warmed flour tortillas, lime wedges and chopped cilantro.
