Lobster Rolls with Pickles & Tarragon Butter

All I’m craving are these lobster rolls with tarragon butter and pickles! This recipe uses both a tarragon butter and mayo mixed with celery for crunch and bread and butter pickles for sweetness. So delicious and SO so good! You can alternatively substitute these out with shrimp as well, or oyster mushrooms for a vegetarian sub. Serve with potato chips!

Normally for lobster rolls, it’s between a warm melted butter roll, or cold mayo roll. This is sort of a hybrid of both! Are you a warm butter, or mayonnaise roll person? Personally, it depends on my mood, but I generally love both!

What is a lobster roll?

Lobster rolls are a classic New England recipe, and this recipe is inspired by the traditional lobster roll, often times just with poached lobster and butter served on a buttered hot-dog, split-top style bun.

What ingredients do you need to make the best lobster roll recipe?

Fresh lobster meat: We are using cooked lobster meat here. You can use anything you have available but I like to use and assortment of claws, tail meat or knuckle meat.

Tarragon butter: The butter is just made with melted butter tossed with tarragon, yes, that simple!

Assembling: The butter and lobster meat are tossed with lemon juice, mayo, pickles, celery, chives and salt and pepper.

Additional add-ons: You can add on any of your favorite toppings like crispy bacon bits, hot sauce, lettuce, or tomatoes, just to name a few.

Instructions to make these lobster rolls with pickles and tarragon butter

Make your tarragon butter: In a pot, melt your butter and add your finely minced tarragon and kosher salt to taste. Once melted, turn off the heat and add your lemon juice.

Toss your lobster meat mixture: Add your lobster meat to the warmed butter and toss to warm the lobster meat, about a couple minutes. Then remove from the heat and mix your lobster/butter mixture with chopped pickles, chopped celery and minced chives. Add your mayo. Stir to combine completely.

Toast your buns and assemble:Toast your buns with butter and stuff with your lobster mixture. Top with more fresh chives and enjoy!

Lobster Rolls with Pickles and Tarragon Butter

Ingredients 

  • 1/4 cup unsalted butter
  • 2 tablespoons tarragon, finely minced
  • juice of 1 lemon
  • 1 pound lobster meat, cooked, shelled and cubed
  • 10 bread and butter pickles, finely chopped
  • 2 sticks celery, finely chopped
  • 1 tablespoon fresh finely chopped chives
  • 1/4 cup mayo
  • kosher salt and black pepper to taste
  • 4 to 5 split-top hot dog buns
  • top with fresh chives

  • In a pot, melt your butter and add your tarragon and salt. Once melted, turn off the heat and add your lemon juice, set aside.
  • Add your lobster meat to the warmed butter and toss to warm the lobster meat, about a couple minutes. Then remove from the heat and mix your lobster/butter mixture with chopped pickles, chopped celery and minced chives. Add your mayo. Stir to combine completely. 
  • Toast your buns with butter and stuff with your lobster mixture. Top with chives and enjoy!
