The most amazing sticky coffee chicken wings with a creamy chive dip! Like, anything more exciting for summer? Wings tossed in a coffee rub and crisped in the air fryer (or oven, fried or grilled) then tossed over with a buttery-coffee sauce.

Serve with a quick chive dip and you are ready to go with the best crunchy, saucy wings ever. Truly unreal! Make this for dinner, for any holiday for entertaining, game day and more!

What ingredients do you need for your sticky coffee chicken wings?

For your coffee rub spice mixture:

You’ll need coffee grounds, garlic or onion powder, paprika, chili powder of cayenne pepper, brown sugar, kosher salt and black pepper.

*Your coffee rub will be the base of the recipe with it being used in both the rub for the chicken brine/spice blend as well as the sauce! Save any extra rub for other items like vegetables, or even more chicken wings!

Note: This rub and sticky sauce has some heat! If you don’t want heat, then remove the spices like pairka etc.

For your wings: You’ll need party wings, flour and your coffee rub

For the sticky coffee sauce: Butter, the above coffee rub and hot sauce for this! You can sub out hot sauce for vinegar or lemon juice.

If you want to sub out butter and make your sauce a tad sweeter as well, you can sub for maple syrup or honey here as well.

Last but not least, for the creamy chive dip: You’ll need creme fraiche, mayo, dash of vinegar, chives, salt and pepper!

Instructions to make these sticky coffee wings

Make your rub

To begin, make your rub. In a bowl, mix coffee grounds, salt, pepper, garlic/onion powder, paprika, chili powder and brown sugar. Set aside.

Get your wings ready

Next, pat dry your wings with paper towels. Place wings in a bowl and toss then with flour and your rub (about 1-2 tablespoons of it). Optional to add a drizzle of olive oil here, but not completely necessary. 

At this point, you can either cook them right then, or cover tightly with plastic wrap and place in the fridge for 3 hours-overnight to dry brine, which helps dry out the wings to get them crispy, and also adds deeper flavor. But you can totally cook them as is without going in the fridge!

Cook your wings

Place either in a 400 degree oven on a wire rack, or in the air fryer at 400 degrees for about 20-25 minutes, flipping halfway, until fully cooked and crispy.

Make your sticky coffee sauce

While your wings are cooking, make your sticky coffee sauce. In a skillet, melt your butter on medium-low heat, careful to not brown the butter to a gentle simmer. Add in your rub (about 2 tablespoons) mixture to combine. Off heat, add in lemon juice and/or a splash of vinegar. Mix to combine and set aside. Any leftover rub can be saved and re-used! 

Make your dip

After that, make your dip. In a small bowl, mix creme fraiche, mayo, chives, vinegar, salt and pepper.

Toss and serve!

When your wings are ready, toss them with your sticky coffee sauce to coat. Top with chopped chives and your dip, serve! 

*Other cooking methods:

You can grill these wings with aluminum foil or parchment paper on a single layer on a sheet tray or baking dish in the oven or on the grill as well. You can also fry them in oil if you prefer not to use an air fryer.

Ingredients 

For your coffee rub

  • 2 tablespoons coffee, ground
  • 1 teaspoon garlic or onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder or cayenne
  • 1 teaspoon brown sugar
  • 2 teaspoons salt
  • 1 teaspoon pepper

For your wings

  • 1 1/2 pounds party wings
  • 1 tablespoon all purpose flour
  • 1 1/2-2 tablespoons of coffee rub
  • Serve with chopped chives, parsley or cilantro

For your sticky coffee sauce

  • 2 tablespoons butter, melted
  • 1 tablespoon of the rub, adjust with more salt as needed
  • 2 tablespoons hot sauce, optional, can sub for vinegar or lemon juice

For your creamy chive dip

  • 1/4 cup creme fraiche
  • 1/4 cup cup mayo
  • 1 small bundle of chives, finely chopped
  • Dash of vinegar
  • Salt and pepper to taste

  • Cook your wings. Place either in a 400 degree oven on a wire rack, or in the air fryer at 400 degrees for about 25-30 minutes, flipping halfway. You can also cook these on the BBQ to grill, I would just remove the flour from the mixture when mixing the rub with your wings.

    This Recipe was absolutely delicious! I was curious on how they would taste and they tasted heavenly. It was deep in flavor and the coffee wasn’t over powering. The chive dip was really good and it reminded me of coffee and cream combo, definitely recommend this recipe.
