Caprese Salad with a Honey Cilantro Lime Dressing

Summer tomatoes being used for this caprese salad, tossed with a honey cilantro lime dressing is everything! A tangy and sweet dressing paired with assorted heirloom and cherry tomatoes, fresh basil leaves  and buffalo mozzarella. All of the flavors in this salad are just beautiful and scream summer! This is a great side dish, as well as can be served with any of your favorite proteins like shrimp, pork, chicken and steak. You can serve this as is, or with some crusty bread, too.

Caprese Salad with a Honey Cilantro Lime Dressing

What ingredients do you need for this caprese salad recipe?

For your cilantro lime dressing

It’s a super simple blend of honey, cilantro, lime juice, spinach, neutral oil (extra-virgin olive oil can work too), garlic cloves, and kosher or sea salt as well as black pepper!

For the salad

All you need is ripe tomatoes (we are using an assortment of baby and heirloom tomatoes!), fresh mozzarella cheese  and fresh basil leaves. Lastly, you can sprinkle of flakey salt for garnish (optional!) 

If you’d like to drizzle on some balsamic vinegar, or balsamic glaze, or a balsamic reduction, you can do that here as well!

Instructions to make this tomato salad recipe

Make your dressing

First, in a blender, make your dressing by adding honey, cilantro, lime juice, spinach, oil, garlic, and salt and pepper. After that, blend well until everything is incorporated, set aside.

Assemble and serve

Next, slice your tomatoes and cheese. Add in a bowl with basil, salt, pepper and olive oil. Add on a generous drizzle of your dressing on, mix to marinate and serve!

Ingredients 

For the Honey Cilantro Lime Dressing

  • 1 tablespoon honey
  • 1 cup cilantro
  • juice of 3 limes
  • 1/2 cup spinach
  • 1/4 cup neutral oil
  • 3 garlic cloves
  • salt and pepper to taste

For the Caprese

  • 1 cup assorted heirloom tomatoes
  • 1 cup assorted cherry tomatoes
  • bundle of basil, about 1 cup
  • 1 cup buffalo mozzarella

Instructions 

  • In a blender, make your dressing by adding honey, cilantro, lime juice, spinach, oil, garlic, and salt and pepper. Blend well until everything is incorporated – set aside.
  • Next, quarter your tomatoes and slice your mozzarella cheese in rounds. Add in a bowl with basil, salt, pepper and olive oil. Add your dressing on, mix to marinate and serve!
