What Are Oven Roasted Potatoes?

What ingredients do you need for this roasted potato recipe?

Potatoes: Use small baby potatoes as the base for this recipe. They cook quicker than full-sized potatoes and require no cutting.

Extra-Virgin Olive Oil: The oil coats the outside of the potatoes, to help the skin get nice and crispy without burning or drying out. 

Smoked Paprika: This spice adds the perfect amount of smoky notes that work really well with the roasted potatoes.

Kosher salt and black pepper: Use just enough to enhance the other flavors and bring out the potatoes’ natural sweetness.

Prepare the potatoes

Preheat your oven to 400°F. On a medium baking sheet lined with parchment paper, add your baby potatoes, and drizzle with olive oil. Season with smoked paprika, salt and pepper. Toss to combine. 

Roast them in the oven

Transfer the potatoes to the oven for 25 to 30 minutes, tossing halfway through, until they are golden brown, slightly crispy, and fork-tender on the inside.

Serve

Remove from the oven and transfer to a serving dish.

What are the best kind of potatoes to roast in the oven?

As long as you use baby potatoes for this recipe, the variety of potatoes won’t affect the taste or texture much. Alternatively, fingerling potatoes are a perfect substitute. For full-sized potatoes, we prefer Russet potatoes or Yukon Gold Potatoes for roasting. Quarter any bigger potatoes and continue this recipe as is. 

What are some other herbs that taste good with roasted potatoes? 

If you want to garnish the roasted potatoes with some fresh herbs, we suggest any of the following options: 

Basil 
Parsley 
Oregano 
Thyme 
Garlic 
Rosemary 

How do you store leftover roasted potatoes? 

Keep your leftover roasted potatoes in an airtight container in the refrigerator for up to three days. Reheat them in the oven or the air fryer to keep them crispy.
