These crispy paprika oven roasted baby potatoes are the perfect side dish for dinner. Smoky, hot, and roasted to perfection, you’ll keep coming back to this classic. What Are Oven Roasted Potatoes?
These small baby potatoes are tossed in olive oil and paprika and then roasted in the oven until the outside is crispy and the inside is fork-tender. They pair great with pork chops, steak, or chicken. Serve alongside our Garlic Herb Roasted Chicken or Perfect Crispy Skin Salmon for some ideas!
What ingredients do you need for this roasted potato recipe?
Potatoes: Use small baby potatoes as the base for this recipe. They cook quicker than full-sized potatoes and require no cutting.
Extra-Virgin Olive Oil: The oil coats the outside of the potatoes, to help the skin get nice and crispy without burning or drying out.
Smoked Paprika: This spice adds the perfect amount of smoky notes that work really well with the roasted potatoes.
Kosher salt and black pepper: Use just enough to enhance the other flavors and bring out the potatoes’ natural sweetness.
Paprika Roasted Baby Potatoes Instructions
Prepare the potatoes
Preheat your oven to 400°F. On a medium baking sheet lined with parchment paper, add your baby potatoes, and drizzle with olive oil. Season with smoked paprika, salt and pepper. Toss to combine.
Roast them in the oven
Transfer the potatoes to the oven for 25 to 30 minutes, tossing halfway through, until they are golden brown, slightly crispy, and fork-tender on the inside.
Serve
Remove from the oven and transfer to a serving dish.
Tips, Tricks and Substitutions
As long as you use baby potatoes for this recipe, the variety of potatoes won’t affect the taste or texture much. Alternatively, fingerling potatoes are a perfect substitute. For full-sized potatoes, we prefer Russet potatoes or Yukon Gold Potatoes for roasting. Quarter any bigger potatoes and continue this recipe as is.
If you want to garnish the roasted potatoes with some fresh herbs, we suggest any of the following options:

Thyme
Garlic
Rosemary
Keep your leftover roasted potatoes in an airtight container in the refrigerator for up to three days. Reheat them in the oven or the air fryer to keep them crispy.
