  • 4 to 5 medium tomatoes, quartered
  • 1 small shallot, sliced into thin rings
  • 2 tablespoon champagne vinegar
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt and freshly ground black pepper

Instructions 

  • In a medium to large bowl, add in your tomatoes and shallots.
  • Add over your vinegar, olive oil, salt, and pepper. Tossing super gently to combine and coat, being careful not to break up the tomatoes.
  • Taste and adjust with salt and pepper. Serve at room temperature, or transfer to the fridge for later.
