Tuna and Orzo Stuffed Peppers
These delicious and flavor-filled tuna and orzo stuffed peppers are everything! They are filled with orzo, tuna, acid from lemon juice, red pepper flakes all tossed with wilted spinach and feta – they are then finished with melted sharp cheddar – it is a DREAM and I am obsessed!ย
This recipe is cozy, simple and filled with amped up protein from the canned Albacore Tuna from Bumble Bee Seafoods, so perfect.ย
What ingredients do you need to make stuffed peppers?
Sweet bell peppers: We are stuffing the bell pepper mixture by using both red and yellow peppers.
For the tuna mixture: It is a mixture of spinach, cooked orzo pasta, tuna, crushed tomatoes/tomato sauce, red pepper flakes, onion, garlic and balsamic. You can also use your other favorite seasonings and herbs like oregano or basil, to name a few.
Cheese: We are finishing with both feta cheese and shredded sharp cheddar. Mozzarella cheese or parmesan cheese will work too!
How To Prepare your Stuffed Peppers
Begin by preheating your oven to 400 degrees to roast your peppers!ย
While youโre doing that, youโre going to get your stuffed orzo mixture ready in a separate skillet.
Youโll start by wilting your spinach and removing from the skillet. In the same skillet, youโll sweat your onions, garlic and red pepper flakes. Youโll add your crushed tomatoes, balsamic and reduce and simmer.ย
Then youโll pour in your cooked orzo, tuna, feta and top with lemon juice. Then you’ll stuff your peppers, melt your cheese, finish with a sprinkling of parsley and DONE!ย

Tuna and Orzo Stuffed Peppers
Ingredients
- 5 red and yellow bell peppers
- 10 oz spinach
- 1 lb orzo
- 2 cans Bumble Beeยฎ Solid White Albacore in Water
- 14.5 oz crushed tomatoes
- 1/4 tsp red pepper flakes
- 1 yellow onion
- 2 garlic cloves
- 1 tsp balsamic vinegar
- 2 cups shredded sharp cheddar
- Juice of 1 lemon
- 1/4 cup crumbled feta
- Extra-virgin olive oil to wilt spinach (about 1 tablespoon)
- Salt and pepper to taste
- Top with parsley
Instructions
- Preheat your oven to 400 degrees. Slice your bell peppers in half - lengthwise, in 2 even halves. Remove seeds. Place the peel side down on a baking tray with a drizzle of oil and roast for 20 minutes. You want them roasted, but still crunchy as they will go back in the oven with the stuffing.
- In the meantime, prep your stuffing mixture. In a deep pan/skillet, wilt your spinach with a drizzle of olive oil, salt and pepper. When it shrinks and wilts, remove from the skillet and set aside.
- In the same skillet, sweat out your onions and garlic with your red pepper flakes on medium-low for 15-20 minutes. Next, add in your crushed tomatoes, balsamic and reduce and simmer down for 20-30 minutes.
- In a separate saucepan, cook your orzo according to the package instructions. Once cooked, transfer to the skillet with the tomato mixture. Toss in your tuna, feta and wilted spinach, mix well. Remove from the heat and add lemon juice.
- Remove your roasted peppers from the oven and stuff them with your mixture. Top with shredded cheddar and place in the oven for 20-25 minutes until the cheese has melted. Top with parsley and serve.
