Vegetarian Shoyu Ramen with Bok Choy
Weeknight dinner is on my mind and when I’m in a pinch, I am making this vegetarian shoyu ramen with bok choy. This ramen is topped with a oozy soft boiled egg, steamed baby bok choy, green onions, chili oil and sesame seeds. It is just the most comforting thing right now – especially with the weather getting a little cooler.
Comfort food at it’s FINEST.
Ways to eat ramen:
This variation is with vegetables, but you can mix and match whichever way you’d like, with pork chashu, crispy chicken thighs or even sautéed shiitake mushrooms. The ideas and toppings are literally endless.
How I like to top my ramen:
- CHILI OIL is a MUST for me. I like to make mine homemade, and it’s always in my fridge.
- SESAME SEEDS as a topping add crunch and toasty flavor, also a big must for me.
- Fresh LIME SQUEEZE, I learned this from the ramen chef at my local spot. It just AMPS up my ramen, I am absolutely obsessed with adding fresh lime juice in my ramen. Some acid and zing is perfect in this.
- CRISPY GARLIC OR ONIONS: You can buy these already made or make your own, they add a nice crunch and also deeper flavors. UM YUM!
- End with freshness, GREEN ONIONS: there is just something about thinly sliced green onions that add freshness to my ramen and a nice onion-y flavor to ramen. Absolutely delicious.
- SOFT BOILED EGG: there is nothing better than slicing open your soft boiled egg in the ramen, getting bites with the broth as well as slurped with the noodles.
There is just SO many ways to top your ramen, and this is how I like to top mine.

Ingredients
- 1 package of Myojo Vegetarian Shoyu Ramen make according to package instructions
- 4 baby boy choy sliced and steamed separately
- 2 soft boiled eggs
- 1 lime optional
- top with green onions chili oil, crispy garlic/onions, togarashi and sesame seed
Instructions
- Cook your ramen and soup contents according to the package instructions.
- In a separate pot, blanch your boy choy, rinse under cold water and set aside.
- In the meantime, prep and slice your green onions and make your soft boiled egg. Find how to make your soft boiled eggs HERE.
- Serve your ramen by topping with your ramen noodles, lime juice, vegetables, chili oil and sesame seeds. Serve hot and enjoy!
