Okay, here me out, this mushroom roasted garlic bread is next level! Grilled mushrooms blended with softened butter and roasted garlic is truly a match made in heaven! The ultimate garlic bread flavors. Instead of just topping with grilled mushrooms, we’ve blended it up with roasted garlic, herbs and butter to create the perfect base and spread for this ciabatta mushroom roasted garlic bread.

This recipe is perfect for entertaining, or even as a side for dinner with a salad, soup or pasta!

For serving, I would definitely serve this with our Peach and Burrata Caprese Salad or this Pasta with Leeks and Green Peas!

What ingredients do you need for this mushroom garlic bread?

Garlic: We are using whole cloves garlic, with the skin on to roast, but you can roast unpeeled or even raw if you prefer. I think the flavor of roasted garlic brings this recipe up a huge notch!

Mushrooms: Gather all your mushrooms! We’re using baby bella and cremini mushrooms, but you can use any mushrooms you can get your hands on, like portobello mushrooms, shiitake mushrooms and I’ve even tried this with oyster mushrooms and a mix and match of different types as well.

Cheese: For this recipe, we’re using shredded parmesan cheese, but you can totally opt for mozzarella cheese, or even shredded cheddar if you prefer.

Herbs: We are using parsley and basil, I love that pair together. Feel free to also mix and match with herbs like cilantro, thyme or even oregano.

Bread: This is a ciabatta based bread recipe, but this would work well with sourdough or white bread as well.

Extra virgin olive oil

Black pepper and kosher salt, as well as flakey salt to finish

Mushroom Roasted Garlic Bread

Instructions to make this recipe

Take out your butter and preheat the oven

To begin, take out your butter to room temperature. Set aside. Preheat your oven to 400 degrees for the your garlic.

Roast your garlic

Slice the tops off your garlic, season with salt, pepper and drizzle olive oil. Roast and bake in aluminum foil in a preheated oven for 40-50 minutes until roasted and able to soft squeeze. Keep the oven on for the bread later on.

Grill your mushrooms

In the meantime while that’s roasting, rub, clean and slice your mushroom mix. Heat a skillet or frying pan on medium high heat to high heat with a drizzle of olive oil and add the mushrooms in, bring it down to lower heat. Saute, mix and cook down with salt and pepper for about 20-30 minutes until dark in color (golden brown) and caramelized, on a low to medium heat so it doesn’t burn.

Make your garlic butter spread

In a blender or food processor, add in your softened butter, the grilled mushrooms, squeeze out the roasted garlic and add parsley, basil and parmesan. Adjust with salt and pepper. Pulse until all combined.

Bake your bread

Take your ciabatta / bread of choice and slice open lengthwise. Spread your garlic butter mushroom mixture all over. Bake for 20-25 minutes until all the butter has melted completely and the bread is toasted. Feel free to use the broiler at the last 4-5 minutes for that extra crunchy bite and char!

Serve!

Remove and slice into wide strips or cubes to serve! Finish with freshly grated parmesan and fresh basil.

Tips, Tricks and Substitutions

What are some other mushrooms substitutions I can use?

Any mushrooms on hand, like shiitake, portobello or oyster mushrooms as well! You can use a mix or just use one throughout.

Can I remove the basil and/or parsley?

You can remove all together, or you can mix and match with your favorite herbs like parsley, rosemary, thyme can all work well here also!

To make this plant forward: you can omit and remove the butter, as well as the parmesan and roast with a plant-butter spread with the mushrooms.

Ingredients 

  • 1 large ciabatta loaf, or bread of choice
  • 1/2 pound butter, softened
  • 2 tablespoons olive oil
  • 3 heads of garlic, roasted, 4 garlic if you want it extra garlicky
  • 1 pound mushrooms, assorted, we're using crimini and baby bella mushrooms
  • 1 handful of parsley
  • 1 handful of fresh basil
  • 1/4 cup grated parmesan cheese
  • salt and pepper to taste
