Green Goddess Salad

Super green goddess salad – loaded up with assorted lettuce, dill and basil. It’s then mixed with “butter” croutons and a creamy, dreamy green dressing filled with loads of herbs, and the secret here: SOFT TOFU, for absolute creaminess. I’m literally obsessing over this dressing – it’s great as a dip as well, but with this salad it’s just perfection – giving major summertime vibes and I’m here for it.

Ingredients

  • For the Dressing
  • 1 cup silken tofu cubed
  • 1/4 th cup dill
  • 1 cup cilantro
  • 1 cup parsley
  • 1 ⁄2 cup green onions
  • juice of 1 lemon
  • 4 garlic cloves
  • 2 tablespoons sherry vinegar
  • 1/3 rd cup almondmilk
  • salt and pepper to taste
  • For the Croutons
  • 1 small sourdough baguette cubed
  • 2 tablespoons plant butter
  • Salt and pepper to taste
  • For the Salad
  • 4 cups assorted greens and lettuce
  • dill + basil to garnish salad

Instructions

  • To begin, preheat your oven to 400 degrees. Cube your baguette and place on a baking tray with salt, pepper and salted Plant Butter. Bake for 15-20 minutes until crispy.
  • In the meantime, in a blender add all your dressing ingredients and blend well until a creamy dressing forms.
  • Assemble your salad by placing your greens in with basil and dill, add in your croutons and drizzle on your dressing. Mix and serve.
