Super easy, dairy-free, creamy green goddess soup! blanched and blended spinach, broccoli, leaks and basil – SO good, simple and lots of flavor. I am so obsessed with this recipe, it’s easy, light and refreshing but also super cozy. You NEED to try it!
Green Goddess Soup
Super easy, dairy-free, creamy green goddess soup! blanched and blended spinach, broccoli, leeks, and basil.
Ingredients
- 2 heads broccoli
- 1/4 cup extra-virgin olive oil
- 1 leek, wash and thinly sliced
- Kosher salt and freshly ground black pepper
- 2 cups spinach
- 1 bundle of basil
- 2 cups broccoli water
Instructions
- Begin by blanching your broccoli and placing in a ice bath, reserving the broccoli water. Set aside.
- In a pot or Dutch oven over medium-high heat, add your olive oil. Once glistening, add your leeks and broccoli. Seasoning with salt and pepper. Then add in your basil and spinach. Wilt everything down for 5 minutes.
- Add in your reserved broccoli water to let everything combine. Blend until smooth, and serve!
