Green Goddess Soup

Super easy, dairy-free, creamy green goddess soup! blanched and blended spinach, broccoli, leeks, and basil.
Prep: 10 minutes
Cook: 20 minutes
Total: 30 minutes
Servings: 4

Ingredients 

  • 2 heads broccoli
  • 1/4 cup extra-virgin olive oil
  • 1 leek, wash and thinly sliced
  • Kosher salt and freshly ground black pepper
  • 2 cups spinach
  • 1 bundle of basil
  • 2 cups broccoli water

Instructions 

  • Begin by blanching your broccoli and placing in a ice bath, reserving the broccoli water. Set aside.
  • In a pot or Dutch oven over medium-high heat, add your olive oil. Once glistening, add your leeks and broccoli. Seasoning with salt and pepper. Then add in your basil and spinach. Wilt everything down for 5 minutes.
  • Add in your reserved broccoli water to let everything combine. Blend until smooth, and serve!
