Talk about grilled chicken wings: these old bay brown butter buffalo grilled wings are SO good and filled with flavor. Yes, I am a big fan of alliteration. If you’re a fan of buffalo wings, you will absolutely love these grilled wings. They are amped up with a special flavor of brown butter. Combining the nuttiness of browned butter, the tang of hot sauce, and the flavor of Old Bay, these wings will be a hit.

What ingredients do you need for these grilled chicken wings?
Chicken wings: We are using party wings for this recipe, which are a mix of drums and flats. But you can also use full wings for this recipe, or purchase drum/flat together and separate yourself.
Old Bay Seasoning: For the rub of the chicken, and in the sauce, we are using old bay, which is a popular seasoning that is great for seafood, poultry, salads and any meats. In the blend, we are also added kosher salt, black pepper and a drizzle of olive oil.
For the sauce: A mix of unsalted butter (that is getting browned), tossed with hot sauce. And then kosher salt, black pepper and old bay seasoning. A simple use of ingredients but packs a punch of flavor.

Instructions to make this recipe
Preheat your grill
Preheat your grill to medium-high heat and pat your chicken dry with a paper towel.
Toss your rub
In a large bowl, toss the chicken wings with olive oil, salt, black pepper, and Old Bay seasoning. Ensure the wings are evenly coated with the seasoning mixture.
Place the wings on the preheated grill and cook for about 10-12 minutes per side, or until they reach an internal temperature of 165°F (74°C). Keep an eye on them to avoid burning and flip them halfway through to cook them evenly. I would recommending starting on a lower heat, to cook the wings inside, and then bring up the heat to get a nice char and grill on them. Flip as needed.
Make your sauce
- While the wings are grilling, prepare the sauce. In a small saucepan, melt butter over medium heat. Allow it to continue cooking until it turns a rich golden brown color, swirling occasionally to ensure even browning, about 5-6 minutes. Keep mixing to ensure the butter does not burn, and that it just browns and toasts.
- Once the butter has browned, remove the saucepan from the heat and add the hot sauce, salt, pepper, and Old Bay seasoning. Stir well to combine all the ingredients.
Assemble!
Transfer the grilled wings to a large bowl and pour your sauce over them. Toss the wings gently, ensuring each one is coated in the sauce.
Serve your grilled wings with celery sticks, carrot sticks, and your favorite dipping sauce (like ranch dressing, or blue cheese dressing!)
Tips, Tricks and Substitutions
How long does it take to cook chicken wings on the grill? Grilled wings will take about 20-25 minutes to grill. You’ll start on a lower heat, so you don’t burn the skin of the wings, while cooking the inside, then up the heat towards the end. If needed to get a nice sear and char on the wings so you get a crispy skin. Although the time with vary pending the size of your wings, so use a meat thermometer to make sure your wings are cooked through properly!
What if I don’t like spice? If you don’t like spice on your wings, you can remove the hot sauce. Adjust the hot sauce to your taste.
What if I don’t have a grill, can I grill this grilled wings on the stovetop? Yes, definitely! Follow the same steps on the stovetop, and if your wings are not getting as crispy, you can also pop them in the oven on broil during the last few minutes as well.
