Recipe Ingredients
Below are the ingredients you need to make this recipe, including all our tips and substitutions.
Broth: Use chicken or vegetable broth–both will work for this recipe. If you want to keep this vegetarian, use vegetable broth!
Aromatics and veggies: You’ll need fresh ginger and garlic for the savory flavor, and some mushrooms for that umami deliciousness. We used a mix of shiitake mushrooms and oyster mushrooms. You can use any of your favorite leafy greens as well, such as bok choy or spinach, to name a few.
Noodles: We are using instant ramen noodles here. We are cooking the noodles directly in the soup base and serving immediately. If you want to cook the noodles in a separate pot, you can!
To Build the Base of the Spicy Miso Broth: White miso paste, low-sodium soy sauce for depth of flavor, and chili oil. We used our Homemade Chili Oil. If you are adding the seasoning packet, add it with the base of the broth above, if you aren’t, adjust to taste with more soy sauce and miso paste, as needed.
Toppings: Choose your favorites here–Nori sheets or seaweed of choice, soft-boiled eggs or a ramen egg, corn, lime juice, bean sprouts, sesame seeds, green onions, sesame oil, and Narutomaki are great choices.

Tips and Substitutions
- Protein-packed: To make it protein-rich, add some chicken or even seafood, like shrimp or clams, if you want to. Saute the protein of choice first, and then follow the rest of the recipe as-is.
- Veggie loaded: Try adding veggies like broccoli, onions, zucchini, carrots, bok choy, and greens like kale, spinach, and chard to the broth.
- Gluten-free: To make gluten-free spicy Miso Ramen, just make sure you use gluten-free noodles and swap the soy sauce for tamari or coconut aminos.
- Lump-free: To make it lump-free, dissolve the Miso in some water first before you add it to the mix. You can also use a sieve as you melt the miso into the broth.
- Make it creamy: Lend some extra richness and creaminess to the broth by adding a teaspoon of sesame paste, tahini, or nut butter of your choice. If you don’t want to use them, add a splash of milk or any plant-based cream of your choice.
- Cook it right: Make sure you cook the noodles until they are just about done. Overcooking them and then letting them sit in the broth will cause them to become soft and mushy.
How to Make Spicy Miso Ramen
Step 1: Heat oil in a pot over medium heat, and fry the sliced garlic in it for a few minutes until golden brown and crispy. Remove the crispy garlic and set them aside on a plate lined with paper towels.
Step 2: To the same pot, add mushrooms and keep cooking until they turn golden brown and crisp. Now add the ginger and garlic and continue cooking for a minute or two until aromatic.
Step 3: Add the miso paste, soy sauce, chili oil, and broth and cook for 5 minutes on medium-high heat. Add the ramen to the pot and cook for about 3 minutes.
Step 4: Serve the spicy miso ramen in a bowl, top with the crispy garlic and favorite toppings, and enjoy.

Spicy miso soup is made of miso as the base. Usually with other aromatics such as garlic, and soy sauce, as well as chili. You can use any of your favorite miso paste varieties, and in this recipe, we are using white miso paste. You can mix and match with any of your favorite aromatics and toppings.
While both miso and tonkatsu ramen may be pork broth-based, tonkatsu traditionally doesn’t have miso paste unless it is a miso ramen tonkatsu. Some miso ramens can also not be pork broth based as well.

30 Minute Spicy Miso Ramen Recipe

Ingredients
- 1 tablespoon neutral oil
- 4 large garlic cloves, 2 thinly sliced and 2 minced
- 8 ounces of assorted mushrooms, such as shiitake mushrooms and oyster mushrooms
- 1 large thumb of ginger, minced
- 2 tablespoons low-sodium soy sauce
- 2 tablespoons white miso paste
- 1 teaspoon chili oil, plus more for serving
- 4 cups chicken broth or vegetable broth
- 3 ounce package of instant ramen noodles
- Toppings, such as soft-boiled eggs, scallions, narutomaki, bean sprouts, toasted sesame seeds, toasted sesame oil, nori sheets
Instructions
- Heat a medium pot over medium-high heat. Add in your neutral oil until shimmering, then add 2 of your sliced garlic cloves to make your crispy garlic topping. Let your garlic crisp up until just under golden brown, about 2 to 4 minutes, removing with a slotted spoon on a plate lined with paper towels.
- Keep your garlic oil in the pot over medium-high heat, and then add in your mushrooms. Sear until golden brown and slightly crisp, about 5 minutes.
- Next, add your remaining 2 minced garlic cloves and minced ginger, and give everything a big toss until aromatic, about 1 to 2 minutes.
- Add your soy sauce, miso paste, chili oil, and broth to finish your ramen broth. If you are using your ramen spice packet, now is the time to add it. Allow this to come to a gentle simmer over medium-high heat, for about 5 minutes. Taste to season with any additional chili oil or soy sauce, if preferred.
- Add in your ramen noodles to boil directly in the soup, for about 3 minutes.
- Transfer into bowls, topping with your crispy garlic, and any toppings of choice! We like to finish with soft-boiled eggs, scallions, sesame seeds, and a drizzle of chili oil.
