I love this quick + easy snack that is perfect to serve as a appetizer or a bar snack with cocktails and a cheese plate.

It starts with a liquid mixture filled with chili flakes, sugar, shallots, Kaffir lime leaves, soy sauce and water that is then cooled down and added on peanuts and cashews with fresh squeezed lime juice.It’s zingy, spicy and just all around just a delicious snack. I specifically love the addition of the shallots which gives flavor, crunch and acidity as well.

Thai Style Spicy Cashew Peanuts

I love this quick + easy snack that is perfect to serve as a appetizer or a bar snack with cocktails and a cheese plate.

Ingredients 

  • juice of 2 limes
  • 1 teaspoon chili flakes
  • 1 teaspoon sugar
  • 1 shallot, thinly spiced
  • 1 cup cashew
  • 1 cup peanuts
  • 2 Kaffir lime leaves
  • 2 tablespoons soy sauce
  • 2 tablespoons water

Instructions 

  • In a saucepan on low heat, add your chili flakes, sugar, shallot, Kaffir lime leaves, soy sauce and water. Mix well until the sugar is dissolved and let cool.
  • In a bowl with your peanuts and cashews, spoon over your liquid mixture and mix until all combined. Top with more fresh chili flakes, and lime juice, mix and serve.
