Turmeric Chicken Skewers with Peanut Sauce

Turmeric marinated chicken skewers served with a creamy homemade peanut sauce and a side salad of cucumbers, red onions and basil. Best lunch ever! You can sub the protein for mushrooms, tofu, eggplant if you want to make it veg, too.
Turmeric Chicken Skewers with Peanut Sauce
Turmeric marinated chicken skewers served with a creamy homemade peanut sauce and a side salad of cucumbers, red onions and basil.
Ingredients
- For the Chicken
- 1 lb chicken thighs, cubed
- 1 cup whole milk, can sub for coconut milk
- 1 tablespoon turmeric powder
- 3 garlic cloves, chopped
- salt and pepper to taste
- For The Peanut Sauce
- 1/2 cup peanut butter
- 1/2 tablespoon palm sugar, can sub for brown sugar
- 1/4 th teaspoon red pepper flakes
- 4 tablespoons soy sauce
- half sprig of lemongrass
- 2 tablespoon sesame oil
- juice of 1 lime
- 2 garlic cloves
- 1 thumb ginger
Instructions
- In a blender, combine all your components for the your peanut sauce, set aside.
- Next, cube your chicken and marinate in a bowl with your ingredients for 30 mins to an hour. After that, place on skewers, char and grill on the stovetop or on a BBQ. Serve with your peanut sauce and side salad of choice.
