Hello beautiful cheese Bourekas! A three cheese Bourekas recipe (cheddar, feta, ricotta) sealed in puff pastry triangles and topped with sesame seeds. It is so easy & tastes even more delicious. My dad used to bring home both cheese & potato bourekas all the time and now I just love making them myself (he said this recipe is one of his favorite bourekas!)I grew up eating these and they are so delicious and nostalgic!

What ingredients do you need to make cheese bourekas?

Puff pastry: (you can also sub for filo dough, but I personally prefer puff pastry for this!)

Three cheeses: I love the saltiness from feta cheese, and tartness from sharp cheddar cheese and it balancing out with ricotta cheese really nicely! Mozzarella cheese would also work nicely here as well.

Dried herbs: I add some dried herbs like dill and parsley, as well as some lemon zest for some brightness = it’s SO good.

Lastly, seal it all together with salt, black pepper and one egg (or egg yolk) to bind it all together.

Instructions to make your cheese bourekas

Make your cheese boureka filling

You’ll begin by mixing all your ingredients in a mixing bowl while your pastry thaws with a pinch of salt and a pinch of black pepper, preheat you oven to 350 degrees as well. In the meantime, in a small bowl, whisk your egg until it is all one color. Set aside.

Stuff your puff pastry

Then you’ll make 4×4 inch squares (use a rolling pin if needed) and stuff the puff pastry sheets with your filling (I just use a small spoon and add the filling in, but you can also place the mixture in a plastic bag and pipe it on), fold over in a triangle on the opposite corner and fork the corners to seal. Brush on beaten egg wash with a pastry brush and sprinkle on top with sesame seeds (poppy seeds will work too!). Place them on baking sheets with parchment paper.

Bake and serve

Bake for 30 to 40 minutes until golden brown, remove and serve.

  • 1 pound / 17.3 ounce puff pastry
  • 6 ounce feta cheese, crumbled
  • 1/2 cup shredded sharp cheddar
  • 1/2 cup ricotta
  • zest of 1 lemon
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • salt and pepper to taste
  • 1 egg, beaten for wash on top
  • black and white sesame seeds
