Herb Parmesan Fries with Lemon Garlic Aioli

These simple herb and parmesan fries with a lemon garlic aioli are epic! They are paired with a homemade (yes, homemade!) lemon garlic aioli that is foolproof, creamy, and delicious. Ingredients for these Parmesan Garlic Aioli Fries
For the aioli: We are making a homemade aioli for these fries! The aioli consists of egg yolks, fresh garlic cloves, dijon mustard, lemon juice, extra-virgin olive oil, neutral oil (such as vegetable oil or canola oil), kosher salt, and pepper!
Fries: We are using frozen fries for this recipe. If you’re looking to make your own, check out our recipe for homemade fries.
For the Fries: For the fries, we are tossing with fresh parsley, oregano, rosemary, olive oil, garlic, fresh lemon, salt, pepper, and parmesan cheese.
Step to make these parmesan fries
Preheat your oven and make your aioli
Begin by preheating and cooking fries according to the package instructions on a baking sheet lined with parchment paper.
In the meantime, make your aioli. In a mason jar or narrow deep cup, add in all your ingredients: egg yolks, minced garlic, dijon, lemon juice, olive oil, neutral oil, sand and pepper. Take your immersion blender and put the blade all the way at the bottom.
Start on low speed and keep the blade on the bottom of the jar. Allow it to get creamy this way and emulsify. Once you see the oils mixing in with the egg yolk from the bottom, slowly start pulsing and bringing the blender up and down. Store on the fridge until ready to use.
Alternatively, if you are making your aioli by hand, in a bowl, add your egg yolk, garlic, dijon and lemon juice and whisk until creamy and mixed throughout. Slowly, start streaming in your oil and mix well with a whisk until a thick aioli forms, keep whisking until all your oil is finished up and the mixture becomes thick and creamy. Set aside.
Toss your fries and serve
In a bowl, toss parsley, rosemary, oregano, olive oil, garlic and salt and pepper. Toss your cooked fries with this mixture until fully coating. Finish with a fresh squeeze of lemon juice and fresh shredded parmesan cheese.

For Your Aioli (makes about 1/2 cup)
- 2 egg yolks
- 2 garlic cloves, minced, 3 garlic cloves if you want a little more garlicky
- 1/2 teaspoon dijon
- 1 tablespoon lemon juice, about 1/2 lemon
- 1/4 cup extra-virgin olive oil
- 1/4 cup neutral oil, we used grape-seed
- Kosher salt and freshly ground black pepper
For Your Fries
- 15 oz frozen fries
- 1/4 cup parsley, finely chopped
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh oregano
- 2 tablespoons extra-virgin olive oil
- 2 garlic cloves, minced or grated
- juice of 1/2 lemon , (more if prefer)
- Kosher salt and freshly ground black pepper
- finish with shredded parmesan
